Puff pastry pinwheels with goat cheese, thyme and honey

Here I am, joining the many many food bloggers who share recipes for simple and effective pastry spirals. And I’m happy to be part of it.
They really are a simple and clever way to use pastry... perfect for any lunchtime feast.
This particular recipe is salty, sweet and fragrant. Perfect with a light salad.
Puff pastry pinwheels with goat cheese, thyme and honey
For about 12 pinwheels
- 270g puff pastry
- A handful of plain flour (for rolling the pastry)
- 250g goat’s cheese (use the creamy white one, rather than the aged one with a rind)
- 3 tablespoons honey
- 4 sprigs of thyme
- 1 free-range egg
Take your pastry out of the fridge to come up to room temperature.
This will make it easier to work with.
Preheat your oven to gas mark 7 (210C, 425F).
First roll your pastry into a large rectangle on a floured surface.
It should be about 2mm thick. Mine measured 40cm by 25cm.
Dot the pastry with your goat’s cheese then use a butter knife to gently spread it over the surface.
Make sure you go almost all the way up to the edges.
Drizzle with the honey.
Strip the thyme from its stems, and sprinkle the leaves over your goat’s cheese and honey.
Now you’re ready to roll the pastry up.
Make a small fold (about 2cm deep) right along the longest side of your pastry. Then continue rolling it up until it’s a long log shape.
Cut the log into 2cm slices.
Place your spirals on a lined baking sheet and press them down slightly.
Leave some space between them as they will spread in the oven.
Glaze the pinwheels with egg
Break your egg into a small mug and beat it with a fork.
Brush the top and sides of your pinwheels with the egg.
Bake for 20-25 minutes.
They’re ready when the pastry is golden.
Tip:
Let your creativity flow as you come up with your own fillings for puff pastry pinwheels. It could be spinach and ricotta with sundried tomatoes. Or maybe poached pear, stilton, and crumbled walnuts.
Or, if you're in a sweet mood, one of my favourites is nutella, crushed toasted hazelnuts and strawberries.
