Open sandwich with honey-roasted fig and burrata
About the recipe
To me, figs mean summer. They remind me of the cheese boards and red wine rounding off long days in the sun.
I love roasting them to bring out their natural jammy sweetness. They are little bursts of flavour, that pair magically with the creamy burrata and fragrant basil.
Open sandwich with honey-roasted fig and burrata
- 8 small figs
- 1 tablespoon honey
- 7 or 8 basil leaves
- 1 ball burrata (I use a vegetarian one)
- A tablespoon balsamic reduction (you can buy it or make your own)
- A drizzle of good extra virgin olive oil (a couple of teaspoons is enough)
- A grind of salt and pepper
- 2 thick slices of crusty brown bread (or you can make your own. I like this recipe)
Preheat your oven to gas mark 6 (200C, 400F).
Roast the figs
It couldn’t be simpler. Top and tail the figs. Quarter or half them (depending on their size).
Put in a baking tray and brush with the honey.
The figs will take about 30 minutes to roast.
Layer your sandwiches.
Lightly toast your slice of bread, then top.
Start with the roasted figs. Tear the basil leaves over the top. Finish it off with a half ball of burrata.
Drizzle with balsamic reduction and olive oil, and grind over some salt and pepper.
